7 Minute Pecan Truffles
Save to BigOvenPrintRemember how the healthiest people in the world eat a handful of nuts every day? Well there couldn’t be a better way to get them than these little truffles. These treats are easy to make and all the ingredients are easy to have on hand. Just nuts, raisins, nut butter! Even better, they are vegan, paleo, whole30, and vegetarian friendly.
Instructions
Assemble your ingredients.
Chop the 1/2 cup walnuts.
Chop the 1/2 cup raisins.
Mix the chopped raisins, chopped walnuts and the 1/2 cup almond butter till well combined.
Grind the 1/2 cup of pecans till they look like this. I use a heaping cup in case I need some extra for firming up the filling mixture.
Drop the filling mixture into the ground pecans. If the mixture is too wet you can add a tablespoon or so of the ground pecans to the filling mixture. But you want it wet enough so the pecans stick to the truffles.
Cover the filling mixture with the ground pecans and roll the truffle around in your hands till you get a nice round truffle.
That's it. They are ready to eat!
