Chocolate Guinness Cake
Save to BigOvenPrintHappy St. Patricks Day everyone! Here is my favorite Irish treat reinvented to be tastier and healthier than ever. Based on Nigella Lawson’s famous cake, but with a tan/mocha cream cheese icing instead of white because… the foam on a Guinness cake should match the foam on a beautiful pint of Guinness Beer.

Pre heat oven to 350.
Assemble your cake ingredients.
Whisk together all your dry ingredients thoroughly.
2 Cups oat flour
1 1/2 tsp baking soda
1/2 tsp salt
3/4 cup cocoa powder**Always buy fair trade cocoa so you're not supporting child slavery in the production of cocoa.
Add your wet ingredients and mix thoroughly, but don't over mix or you'll mix out some of the air bubbles that will make it rise nice and high.
Wet cake ingredients:
3/4 Cup maple syrup
1 Cup melted butter or coconut oil
1 Cup grated zucchini
3 Eggs
1 tsp vanillaPour a little less than 3/4's of the cake batter into your oiled 8 inch round cake pan and the rest into the five cup cake liners.
Bake cup cakes about 20 minutes and the cake about 25 to 30 minutes. You can tell a cake is ready because it will start to pull away from the sides of the pan and will be firm to the touch on the top. Let it cool a bit before trying to remove it from the pan which can be a bit tricky. I loosen the side with a sharp knife, then flip it firmly onto a cutting board, banging the bottom of the cake pan to make sure none of the cake sticks. Then flip it again onto a cooling rack so it is right side up.
While the cake cools assemble your icing ingredients.
2 Packages cream cheese
1/4 Cup maple syrup
1/4 Cup Guinness Beer
1 Tsp. VanillaWhip all icing ingredients together with a mixer until smooth and creamy.
Ice your cake and your cupcakes and you're ready to celebrate St. Patrick's Day in style! Dig in or refrigerate until you're ready to eat.

This was a wonderful recipe! My family loves sweet treats, especially chocolate. I was wondering how they would feel about zucchini in their cake, but no one even seemed to notice! Admittedly, we had to make this recipe without the Guinness (haha), because we didn’t have any on hand, but it was still delicious! Thanks for a great edition to our healthy dessert collection!
