Valentine Thumbprints

They are loaded with immune boosting almonds, organic oats, healthy fats, and just a touch of real maple syrup. Make them this weekend and slide them in the freezer . Then you can pull them out on Valentine’s Day and surprise a loved one!
P.S. I have a Valentine Surprise for you, I’ve included my AMAZING TWO Step Strawberry Jam. Processed jams are mostly flavored sugar water, this jam is mostly fruit with a little local honey or maple syrup and the taste will blow your mind. With your first bite, you’ll find yourself standing in a field full of strawberries with the sun on your face. Happy Valentine’s Day my friends.

Instructions
Preheat Oven to 350 degrees.
Assemble your ingredients.
Grind the 1 cup almonds in food processor and dump into your mixing bowl.
Grind the 1 cup oats and dump into mixing bowl.
Melt the butter or coconut oil and add to the mixing bowl.
Add all the rest of the ingredients to the mixing bowl and mix thoroughly.
Scoop out cookie dough with spoon or cookie scoop into even size cookies.
Flatten dough with your hand and pinch the bottom of each cookie, with your thumb and first finger, into the bottom of a heart shape. See below.
Be sure and dip you fingers into a little bit of water so they don't stick to the dough.
Using a knife separate the top of the cookie into the shape of the top of a heart.
Press your thumbprint into the center of the cookie to make way for the strawberry jam!
Add a small (about 1/2 teaspoon) jam to each cookie.
Bake for 10-12 Minutes or until just starting to turn a golden brown.
Cool a bit before trying to move them from the cookie sheet to the cooling rack. They should be ready to enjoy in just a few minutes, but they get less crumbly once the are completely cooled. Enjoy!

You can use store bought jam, and I often do with these cookies, but making your own jam is simple, fun and much better for you because instead of lots of sugar you're eating mostly immune boosting berries. And the flavor of the berries really stands out.
You can use this simple recipe with any berries.
Dump fresh or frozen berries into a small sauce pan and simmer until thick.
Mix cooked and thickened strawberries with a bit of local honey or real maple syrup and that's it–you have 2 Step Strawberry Jam!
You will be amazed at how strong the strawberry flavor is in this jam and you'll wonder why you've been eating so much store bought stuff. This jam won't keep as long as the jam you get in the store bought so make it in small batches or put it in the freezer.
