Montana Mountain Cookies
Save to BigOvenPrintThese cookies are AMAZING, even though health wise they are just like eating a bowl of oatmeal with nut and raisins! I highly recommend them.

Instructions
Assemble your ingredients.
Put the 1 3/4 cups pecans in a food processor and pulse until just finely ground. Then dump them in your mixing bowl.
Grind 1 cup of oats in the food processor and add them to the mixing bowl.
Now add the rest of the dry ingredients, but NOT the chopped raisins or rough chopped pecans. They go in at the end.
3/4 cup flour
1 tsp baking soda
1 cup rolled oats
1/2 tsp cinnamon
1/2 tsp saltMix together, then make a little well in the center of the bowl to add in all the wet ingredients.
Add all the wet ingredients to the well in the center of the bowl:
2 Tb milk
1/4 cup melted coconut oil
2 tsp pure vanilla extract
1/3 cup maple syrupAnd mix everything together.
Chop the 2/3 cup raisins and add to the bowl.
Rough chop the pecans (meaning leave them in pretty bit pieces.) And add them to the bowl with the other ingredients.
Mix the nuts and raisins in with the other ingredients until well combined.
With a spoon or a cookie scoop drop about 1 heaping tablespoon of dough for each cookies on to the cookie sheet.
Flatten each scoop of cookie dough with your hand.
Bake for 10 minutes at 350F, do not over bake.
Remove from oven and let sit on baking sheet for 2 minutes before placing onto a cooling rack. Cool and enjoy!
I use these cookies on car trips, backpacking trips, as a quick breakfast, an afternoon treat or a wonderful dessert.
