The secret about these pumpkin brownies is that they may or may not contain any pumpkin. Sweet potatoes or red garnet yams are even healthier than pumpkins and they taste amazing. Start making these and you’ll be amazed at how often you prefer them to chocolate brownies.


Ingredients

  • 2 Cups
    Whole Oat Flour
  • 1 Teaspoon
    Cinnamon
  • 1 Teaspoon
    Salt
  • 1 Teaspoon
    Baking Powder
  • 1 Teaspoon
    Ginger (spice)
  • 1/4 Teaspoon
    Allspice
  • 1/4 Teaspoon
    Cloves (ground)
  • 1 Cup
    Puréed red garnet yam, pumpkin or sweet potato
  • 1
    Egg
  • 1/2 Cup
    Melted coconut oil or butter
  • 1 Cup
    Maple Syrup
  • 1 Tablespoon
    Pure Vanilla Extract

Instructions

  1. Preheat oven to 350 F

  2. Butter or oil a glass 9 x 13 pyrex baking dish

  3. Mix all dry ingredients

  4. Add the wet ingredients and mix thoroughly (don't over mix - as soon as the batter is consistent stop mixing).

  5. Pour into the 9 x 13 baking dish

  6. Sprinkle with chopped nuts (optional)

  7. Bake for 25 minutes at 350 F
