5 Minute No Bake Cookies

This was a recipe conversion request from one of my subscribers, his grandmother used to make them for him. The original recipe called for a whopping  1 3/4 cup sugar. We lose all the sugar and substitute a 1/4 cup real maple syrup.


Ingredients

  • 1/2 Cup
    Melted Coconut Oil
  • 1/2 Cup
    Organic Peanut Butter
  • 1/4 Cup
    Real Maple Syrup
  • 1/4 Cup
    Organic Fair Trade Cocoa Powder
  • 1 Teaspoon
    Pure Vanilla Extract
  • 2 Cups
    Organic Rolled Oats

Instructions

  1. Assemble your ingredients.

    Organic Oats, real vanilla, organic fair trade cocoa, organic peanut butter, real maple syrup, coconut oil
  2. Mix everything but the oats in a medium sized pan on low heat till melted together.

    No Bake Cookies ingredients melting on the stove.
  3. Add the 2 cups oats, stir thoroughly, and drop spoonfuls onto a wax paper lined cookie sheet.

    Mix in the organic oats
  4. Place in freezer until firm. Depending on the size of the cookies about 10-15 minutes. These need to be stored in the freezer.

    Freeze no bake cookies till firm.
  5. Enjoy!

Nutrition: Oats are loaded with healthy fiber, and fiber will help protect you from what little sweetener these treats contain. Peanut butter is an awesome snack food. It contains lots of the antioxidant vitamin E, magnesium for strong bones, immune boosting B6, and research shows that eating peanuts can reduce your risk of a number of chronic diseases like heart disease and diabetes.

    These are awesome Beth! Great for that time of day when you need a little something sweet. I made mine on the small size so I could just pop it into my mouth from the freezer. So good!
