These are easy to make with only a few ingredients, but taste best if you can hold off eating them until they have spent about 30 minutes in the freezer.
Assemble your ingredients.
Remove the pit and the little flower like stem, if it is still attached, from the dates.
Blend the dates with the 1/2 cup cocoa powder till it looks like small crumbs.
Add the peanut butter and blend until just combined.
Form into little round balls, flatten each with your hand, and make chris crossed shapes on the top of each cookie with a fork like you would for regular peanut butter cookies. Then top with chopped peanuts.
You can use this same recipe for Chocolate Peanut Butter Thumbprint Cookies. Just press your thumb into the ball of cookie dough and drop in a dollop of peanut butter into each cookie.
