The best Thumbprint Cookie recipe ever! Easy to make, gluten free, and no sugar. They’re a great after school snack and a quick breakfast that can replace those highly processed pop tarts or sugar filled breakfast cereals.
Preheat oven to 350 F
STEP 1. Place almonds in food processor and pulse until finely ground then do the same with the oats. Combine the ground almonds with the rest of the ingredients, except the jam, in a mixing bowl and stir until well mixed.
STEP 2. Using a spoon drop balls of the cookie batter onto a cookie sheet.
STEP 3. Press your thumb into the center of each cookie and fill the indentation with jam.
STEP 4. Bake for 15 minutes.
